Split Pea Soup

 Many thanks to my Mommy, Rosemary Martin, for this recipe!!


1 lb. dried green split peas
8 cups chicken broth/ water
4 stalks celery
4 carrots, chopped
1-2 shallots, chopped
1 tbsp olive oil
1/2 tsp salt
1/4 tsp pepper
1 bay leaf

Sort and wash peas, place in a large saucepan. 

Add chicken broth and water. (I usually don't have enough chicken broth on hand to use only broth, which is why I just supplement with water.)

Add remaining ingredients.

Bring mixture to a boil, reduce head and simmer for 2 hours, stirring often.  Remove and discard bay leaf.
