Oatmeal

MSG and other unsafe stuff lurks in most packaged cereal.  Oatmeal is a great option.

Pumpkin Spice Oatmeal:  Stir a dollop of canned pumpkin puree.  Add sprinkles of ginger, nutmeg, cinnamon, and brown sugar.

Oatmeal Cookie:  Add some flavors that make oatmeal cookies so good.  1 drop of vanilla extract, cinnamon, and a little brown sugar.  HYH omission:  raisins.

Strawberries, peaches, apples, blueberries, are all great added to oatmeal, either cooked with it or stirred in fresh after it cooks.  Honey is an ideal sweetener.  Be careful of using jam or preserves.  Unsafe stuff can lurk in those jars.

Instant Oatmeal Mix    

6 cups old-fashioned rolled oats
1/2 cup light brown sugar
1 tbsp ground cinnamon
1 tsp salt

1. Preheat oven to 325.  Spread the oats on a baking sheet and bake for 20 minutes.   Cool slightly.
2.  In the bowl of a food processor, combine 4 cups of the toasted oats, the brown sugar, cinnamon and salt.  Pulse until the mixture is a rough powder.
3.  Pour into a large wide-mouthed jar or container.  Pour in the remaining 2 cups of toasted oats.  Stir thoroughly and top with lid.
4.  To make the oatmeal, combine 1/2 cup of the mixture with 1 to 1 1/2 cups of boiling water.  Cover with a plate and let sit for 5 minutes before stirring and serving.

store:  covered container room temp, 4 weeks
fridge:  covered container, 3 months
freezer:  freezer-safe container or bag, 6 months
